This is a gorgeous Grand Cru from one of the stars of Chablis. It is all about the terroir, this is icon level Chardonnay. Straight from the White Soils of Blanchot, we get a wine full of apricot and apples on the nose, with an intensity of flavour that meshes beautifully with chalky minerality and soaring acidity. This is what Chardonnay is all about.

Patrick Piuze - Chablis Grand Cru 'Blanchots'

This Chablis hails from the fabled lieu-dit ‘Les Pargues’ which stretches across a valley between 1er crus Vaillons and Montmains, held in high esteem by the Cistercian monks who delineated these vineyards centuries ago.

Patrick treats this special historic parcel with the same care as his 1er and Grand Cru bottlings, aging them in old wood instead of stainless steel.

Patrick Piuze - Chablis 'La Grande Vallee'

This is the first time we have carried this specific bottling from Piuze.  Chichée is on a plateau near the 1er Cru site, Vaucoupin. This is textbook Chablis: unoaked with great minerality with ripe green apple on the pallet.

Another new wine for the '22 vintage, this is from a parcel in Beine on the west side of Chablis. Vinified and aged in tank. Bright acidity with more tropical fruit.

Patrick Piuze - Chablis 'Plateau de la Cornasse'

From a plot on a plateau on the left bank of the Serein, across from Fourchaume, from vines planted in 1974. A fresh cuvée because the grapes never have direct contact with the sun, as the rows are planted east to west. Fermented and aged in tank.

Patrick Piuze - Chablis 'Terroir de La Chapelle'

Sechets is a sub-climat of 1er Cru Vaillons. Minots is the warmest part of the valley;as the valley opens up, the sites are cooler. This wine has nice concentration with passion fruit and a salty minerality.

Coming from vines located just above Vincent Dauvissat’s, this Chablis 1er Cru will last in the bottle for another twenty years, limited quantities available.

From an old Aligoté plot in Saint Bris, planted in 1953. The field is surrounded by hemp. Fermented and aged in tank. Impressive saline and mineral notes with a crisp acidity.

Patrick Piuze lets his wines truly show the essence of the land on which they were grown. His Petit Chablis is from a parcel on the Grand Cru hill called the Plateau des Clos above Vaudésir. The wine was fermented and aged in stainless steel tanks. A fine pairing for fish tacos.
